Texanista Red Enchilada Sauce

Jessica posted this picture on her blog this morning and I immediately knew what I wanted for dinner. Luckily, she called and I was able to procure the recipe given to her by Aunt-In-Law Lidia, a true Texanista and master of Southwest/ Mexican cuisine.

Red Enchilada Sauce

1/4 cup oil (I used olive)
1/4 cup flour
2 garlic cloves, minced
2 tsp cumin
1/2 tsp ground black pepper
1 tsp salt (I may reduce this next time)
2 Tablespoons red chili powder
1/2 tsp oregano
3 cups broth (I made it from my favorite veggie broth ever)

Heat oil over medium heat in a large skillet. Whisk in flour and cook until it is browned. Add garlic and saute until tender. Add cumin, pepper, salt, chili powder, and oregano. Slowly add broth while whisking. Bring mixture to a light boil. Reduce heat and simmer until thickened.

Tonight I was feeling lazy so I mixed up some shredded cheese, sour cream, and shredded zucchini for the filling (kind random, but it was tasty). Then I stuck individual enchiladas in the micro as kids got hungry, but here are the instructions for Lidia's.

Lidia's Enchiladas

Cook and shred fryer chicken. Combine chicken with 1/2 cup of red enchilada sauce. Warm corn tortillas in hot oil in a shallow pan on the stove. Dip tortillas in red sauce. Fill with chicken mixture and roll. Place in casserole dish. Top with shredded cheese. Bake at 350 degrees for 15 minutes.

I haven't tried this rice yet, but I surely will. Tonight I mixed some leftover quinoa with some of the enchilada sauce and it was great.

Mexican Rice

1 T. oil
1/2 green onion, sliced lengthwise (you will remove this before serving)
1/2 green pepper
2 T bouillion
2 C. water
8oz tomato sauce

Heat oil in saute pan. Add onion pepper and rice. Saute until rice is lightly browned. Add remaining ingredients and bring to a boil. Reduce heat and cover. Simmer until rice is tender and water is absorbed.

Creamy Tomato Gnocchi

This recipe is from Meatless Monday. I was a little skeptical about a vegan "Cream" sauce, but was pleasantly surprised. My kids and Dave all seemed to enjoy it too, and really, there is nothing terribly unusual about it. Ground nuts give it the creamy texture.

My notes:

--I didn't have raw cashews. After much deliberating amongst me, myself, and I whether I should try roasted cashews or another raw nut I went with raw almonds. I thought it turned out to be a good choice.

--Next time I will grind the nuts up a bit before I add the other ingredients. Almonds bouncing around in tomato sauce made a big mess.

--I have never heard of chunky tomato sauce so I used crushed tomatoes.

--2 tsp. of red pepper flakes seemed like a lot for my kids based on previous red pepper experiences so I reduced it to 1/2 tsp. Next time I'll use at least 1 1/2 tsp.

Serves 4

For the sauce:

  • 3/4 cup low sodium chunky tomato sauce
  • 1/4 cup water
  • 2 tablespoons tomato paste
  • 1/4 cup cashews, raw
  • 2 teaspoons red pepper flakes
  • splash of white wine

To complete the dish:

  • 1 pack gnocchi, cooked according to package instructions
  • 1 cup whole cherry tomatoes
  • 1/2 cup zucchini, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • basil, chopped for garnish

To make the sauce:

Combine tomato sauce, water, tomato paste, cashews, red pepper and white wine in a food professor and blend until smooth and creamy. You may need to add more water to get to the desired consistency.

To complete the dish:

Heat the olive oil in a large sauté pan over medium-high heat. Add the tomatoes, zucchini and sauté for 5-7 minutes. Add the garlic and sauté for 3-5 minutes more, or until garlic is golden.

Pour the sauce from the food professor into the sauté pan and mix thoroughly. Turn heat down to medium low and simmer for 4-5 minutes.

Add the cooked gnocchi to the pan for 3-5 minutes, or until gnocchi is heated. Remove from heat and garnish with chopped basil leaves.

Pasta with Squash and Garlic

I saw this recipe on a cooking show. They didn't so much give the recipe as describe the method, and although I've made this several times, I really can't be much more specific. I just kind of make it as looks and tastes good to me. It is a easy and fast dinner with ingredients I usually have on hand, during zucchini season anyway.

Cook desired pasta, I use spaghetti, according to directions. Make sure the water is well-salted. Drain pasta and reserve 1 cup or so of cooking liquid.

Warm a couple tablespoons of olive oil in large skillet, not too hot or garlic will become bitter. Brown whole cloves of garlic on the oil--I would say at least four. When garlic is brown, place zucchini in a single layer in pan. Let zucchini cook until it is good and brown. The carmelizing really enhances the flavor. Turn zucchini and brown the other side.

When zucchini is good and brown, add cooked pasta to the skillet, stir around to let pasta deglaze the pan. Don't do this for too long though or you pasta will get tough.

Serve with ample amounts of shredded parmesan.

California Grilled Veggie Sandwich

I would plant a garden for no other reason but to make this sandwich. The directions call for grilling, but you could just as easily use a panini maker.

It calls for feta, but I've never used it. I usually use swiss or provolone.

I made these last week and told Dave, "Call me crazy, but I really love these sandwiches." To which he replied, "I really love these sandwiches too." I turned up my hearing aid and asked for a repeat, but he really did use the word "love" in connection with vegetable sandwiches. I think that's a fair endorsement.

  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1 red bell peppers
  • 1 small zucchini
  • 1 red onion
  • 1 small yellow squash
  • loaf of foccaccia bread, or other artisan bread, sliced however you prefer for sandwiches
  • sliced or shredded Swiss or Provolone cheese
Combine mayonnaise, garlic and lemon juice in a small bowl. Cover and refrigerate while other ingredients are prepared.

Preheat grill to high heat.

Slice zucchini and squash lengthwise, a little thinner than a quarter inch. Slice bell peppers and onions the same thickness as the squash. Toss in a bowl with olive oil. Arrange on hot grill with zucchini and pepper near the middle and onions and squash around. Grill for about 3 minutes each side, or until they start to blacken. Remove from grill.

To assemble sandwiches. Spread each side of bread with mayonnaise. Layer vegetables as desired, top with cheese, and 2nd slice of bread. You may want to use toothpicks to hold it together. Place assemble sandwich on grill over low heat and cook until cheese is melted.

"Zucchini ai Quattro Formaggi Panini"

(or Zucchini and Four Cheese Panini)

10 oz shredded zucchini
1/2 tsp kosher salt
4 oz shredded mozzarella
2 oz shredded fontina
2 oz shredded provolone
2 T parmesan
1 tsp dried basil
8 slices crusty country bread
extra virgin olive oil

Place shredded zucchini in a colander and toss with salt. Let stand for 20 min. Rinse and press out excess liquid. Toss with four cheeses and the basil. Put cheese/zucchini mixture on bread. Brush exterior with olive oil and grill for 3-4 minutes.
